This is (one of) my husband's favourite treats.
1 packet of tennis biscuits, crushed
1/2 cup melted butter (125g)
500 ml cream
1 tub cottage cheese
2/3 cup sugar (180ml)
1/4 cup lemon juice (60ml)
passion fruit pulp (optional)
lemon zest to top (not essential)
Put all the filling ingredients (except passion fruit pulp) in a blender and blend until smooth. Stir in pulp. Pour over base and put in freezer for at least 3,5hrs.
i find it helps to take it out about 20 minutes before serving.
